This is the impedance curve from WinISD Pro for
these woofers.

Adire Brahma 15"
Stryke HE15"
Lambda TD15X

What does this tell me from a performance point of view?
Ideally, if we didn't have a bell shape, the woofers
impedance would be flat and that would yield flat frequency
response within the drivers limits of course? true/false

The peak of the bell curve, this is the problematic frequency
range for the woofer ? true/false

I'm trying to optimize my driver selection and I'm just
curious if I should place alot or very little emphasis on
this curve?

Each of those impedance curves are pretty good, really. Not a lot of fluctuation. Depending on your crossover and amp, it may or may not be an issue. If so, you can use a Zobel to counteract some of the change, specifically, the rising impedance due to motor inductance.
