I noticed that the Jasper Jigs are on sale at Parts Express for the next week or so. I'm gonna go ahead and pick up the pair I think.

That's a great price. I really like and get a lot of use out of mine for driver mortises as well as holes. Gotta watch the sizing tho'. Whether my "1/4" inch bit is metric or the Jasper is off a tad, the hole is always undersized. Rasp, rasp, file, file. Now I add a sixteenth.

Would just the one that goes larger (#400) work for most anything? Or is it best to get both?

I would get both. I use the small jig for anything smaller than the max -- 7 1/2". It is just more convenient to use and will go down to the smaller port sizes. I only use the large one when I have to.

Ditto the undersize cuts. I always add a 1/16" also.
