I have an Apple TV hooked up to my television and want to connect my television to my receiver using an optical cable (unfortunately, it doesn't have HDMI). Is this the best way to go about it? I've read elsewhere that there could be some jitteriness because of the cable.

I believe that is what its for.

Optical output is the digital audio output for your receiver, DAC, or any other device having an optical input.

As far as jitter, i don't know.
Try to keep the cord short (under 6').
