I have heard that a popcorn ceiling will help with acoustics in a room. Is it enough of a difference to justify the expense, or will it be just as good to just leave it as is?

A "popcorn ceiling" has features that are much too small to be acoustically significant. If you want to damp medium to high frequencies, use absorbent wedges.
I am hearing of the 'popcorn ceiling' concept for the first time ever. I agree with Wayne that absorbent wedges are more popular. You will achieve far-reaching effects in comparison to the former.
