How difficult is it to run all the cables from the home theater, speakers, cable, modems, etc through the walls so that there is minimal amount of cables visible? If this is something that I need to hire a real professional for and not only my cousin, how much should I expect to pay?

All depends on how far you want to travel through the wall. If you are unsure may not be a bad idea to call a professional. Getting an estimate can't hurt.
