Do you believe that it can be challenge to actually select a mixer? Is it possible to get both a recording and live sound mixer in one package and what are some of the factors to consider before the actual purchase?

Yes, it may be a challenge finding one but with such a variety to choose from, it can't be so hard to find one to suit your needs. Always go for a mixer with a large channel count since it allows you to connect and route many things through it.
