I am considering doing this as it looks like the biggest bang for the buck approach. My first choice is here:

The eval board is $170.00 and is a complete DAC from SPDIF in to line out. All that is needed is a 15V raw DC supply.

Anyone here done something similar? just curious.

I think that's an excellent idea. That way you can experiment with output filters and oversampling on your own. Please keep us posted.
