I am a proponent of the minimum signal path approach. As such, I do not like EQ. This is probably a stupid questions and I think I know the answer but I'll ask anyway. Is there a way to get around RIAA EQ on turntables?

Not really; the eq. restores the highs and lows. Without it you'd have no frequency range.
