It's been a while since I've tried it, but I remember using plastic bags and tarps.  I was more worried about protecting my equipment than the sound quality, though.
Yeah, the safety of the equipment matters more than the sound quality simply because you can regret making the videos if water penetrates the devices which can lead to big damage. So, it is always important to take note of that when filming in the rain.
