Room acoustics affect everything. But if you set the microphone very close to the source, you can minimize the level of the reflections and thereby reduce the room's contribution.

On the other hand, some artists actually want the influence of a certain room. They record in a place specifically because they like how it sounds there. This is using the room as an acoustic filter.
