The signal is modulated (or altered) differently. FM is frequency modulation, while AM is amplitude modulation. FM is less affected by weather and can be broadcast in stereo, while weather disrupts AM quite easily and it's in mono. AM can be heard at a greater range, though, if the signal refracts off the atmosphere.
