I have a quick question about room acoustics. Does the height of the ceiling affect the sound that much? If so how would it be different in a low ceiling room than a normal room?

All room boundaries matter. The floor/ceiling mode is higher frequency than wall/wall because the distance is shorter, usually eight feet. The first vertical axial mode caused by an eight foot ceiling is 70Hz and the second one is 140Hz.

The height of the ceiling definitely has an effect and you should check for the nodes and reflections in a room. I have heard of people that use acoustic 'clouds' to get rid of refelctions.
