We are in the process of selling our house and buying a new one. So far, all of the houses we've looked at have oddly shaped living rooms. Will this change how we need to layout the speakers?

I wouldn't think so. Assuming you put your couch roughly in the center of the room with the TV backed up to or mounted on a wall, you should still be able to set the two front speakers to either side of the TV, set the center channel in front of the TV, and mount the two rear channel speakers behind you.
