for using the 3-pi speakers as LCR behind a perforated screen what you you recommend the crossover be set at? what would you recommend for the surround channels?

Use the crossover shown in the plans. It is optimized and should not be changed. Do not substitute drivers - use only the ones suggested in the plans.
Again, this is an optimized design. If you deviate, you are throwing away literally hundreds of hours of design and test time, and that after a lifetime of study and perfection of this style loudspeaker. I don't want to come across immodestly, but I do want to impress upon you that this isn't just a weekend effort using casually chosen drivers. It is a mature and fully polished design.
For surrounds, you can use one π or two π model loudspeakers.

Don't crossover, blend the mains with the subs. Low-pass the subs, but don't high-pass the mains. These speakers won't need the high-pass like you might do in a prosound environment. What you'll gain is better smoothing of room modes.

Yes, we keep most kits in stock. We have to assemble the crossovers, because there are several options. But we keep a large stock of all the components on hand so we can build any version crossover in just a few days.
As for a center, I would suggest that it be the same as the L/R mains. If this is impractical, go with a phantom center.
