I thought the purpose was to attenuate the midrange some by keeping it from bouncing between opposite faces. only one side lined is needed to do that. Putting more in than necessary would have a deadening effect and reduce the liveliness of the speaker.

That's right. What we want to accomplish is attenuation of higher frequency standing waves. Hanging sheets of insulation suspended a little way from on wall would be a great way to do it, but it would also be harder to accomplish. The trick is to reduce higher frequency energies inside the cabinet without altering cabinet tuning too much.
